Speak the language of food safety

5-star food hygiene rating

The UK's Food Hygiene Rating Scheme score (0–5) awarded by local authorities following an EHO inspection, reflecting a business's food safety standards.

Back office

Labl.it's cloud-based management platform where kitchens set up products, expiry rules, allergens, and user permissions, and view reporting across one or multiple sites.

Benedict's Law

A national allergy safety framework for schools in England, introduced following the death of five-year-old Benedict Blythe. Statutory guidance is due by July 2026, with protections in force from September 2026. Requires whole-school allergy policies, staff anaphylaxis training, access to emergency adrenaline auto-injectors, individual allergy action plans, and stronger allergen record-keeping.

Chilled storage temperature

Food held at 8°C or below to meet UK food safety requirements for refrigerated storage.

Core cooking temperature

Food cooked to a minimum internal temperature of 75°C to ensure harmful bacteria are destroyed.

COSHH (Control of Substances Hazardous to Health)

UK regulations requiring businesses to control exposure to hazardous substances (e.g. cleaning chemicals) in the workplace.

Cross-contamination

The transfer of harmful bacteria or allergens from one food, surface, or piece of equipment to another, commonly prevented by storing raw items below ready-to-eat items and keeping allergenic ingredients clearly separated and labelled.

EHO (Environmental Health Officer)

A local authority official responsible for inspecting food businesses to assess food hygiene, safety practices, and regulatory compliance. EHOs assess what a kitchen actually does in practice, not just what's documented on paper, including staff behaviour, systems, and records.

FHS (Food Hypersensitive customer)

Frozen storage temperature

Food held at -18°C or colder to meet UK food safety requirements for frozen storage.
