Manual and pre-printed labels
Day dots, dissolvable labels and write-on rolls. The baseline most kitchens start from, and worth taking seriously rather than dismissing.
What's good about it?
Almost nothing to go wrong. No battery, no software, no supplier dependency. The cost per label is low, and a kitchen prepping a handful of items a day can run this well indefinitely.
Where it breaks.
Every label depends on a person recalling the shelf life, working out the date, remembering which of the 14 declarable allergens apply, and writing it legibly. That works when there's time. It degrades exactly when you need it most, which is mid-service with a section down. Handwriting is also the most common reason a label can't be read three days later, and an unreadable label is about as useful as no label at all.
PPDS is where handwriting really struggles. Full ingredient declarations with emphasised allergens are difficult to handwrite accurately and repeatedly, and the consequences of getting one wrong are serious.
Fixed printer stations

What's good about it?
Consistent, legible output. Mains powered, so no battery to manage. If your labelling all happens at one place, this is a perfectly reasonable setup, and for a dedicated packing bench producing retail units it can be the better choice.
Where it breaks.
It assumes labelling happens in one location. In most kitchens it doesn't. Prep happens on multiple benches, in walk-ins, in the pastry section, at different times, by different people. Every label then means walking to the machine and back, and during a busy service people don’t always have time to make that journey.
That's the real sign of failure: not a broken machine, but a working machine that quietly stops being used. A system used for half your prep produces half a record, which is worse than a consistent manual one.
